The Best Fluffy Gluten Free Pancakes

Light, fluffy, and perfectly golden—these pancakes are the ultimate breakfast treat. Made with our signature flour blend, they offer the classic diner-style texture you’ve been craving, completely gluten-free.

Equipment

  • Large mixing bowl
  • Whisk
  • Griddle or non-stick skillet

Ingredients

  • 1 Cup Mightylicious All-Purpose GF flour
  • 1 Tbsp Baking Powder
  • 2 Tbsp Maple Syrup
  • 2 Tbsp Melted butter or oil
  • 1 Egg (or ¼ cup preferred yogurt)
  • 1 tsp Vanilla
  • ¼ tsp salt
  • ¾ cup milk

Instructions

  1. Melt butter.
  2. In a large bowl, whisk together the wet ingredients: maple syrup, butter, milk, egg, vanilla extract, and salt until combined.
  3. Add the Mightylicious GF flour and baking powder to the liquid mixture. Stir until smooth.
  4. Heat a greased griddle over medium heat.
  5. Scoop pancake batter onto the hot griddle to your desired size.
