Ingredients:
150g sourdough starter
400g water
25 g honey
25 g olive oil
500g Mightylicious GF Flour Blend
15g salt
1. Combine water, sourdough starter, and olive oil and honey in a large bowl.
2. Whisk well to combine, making sure all the ingredients are fully dissolved.
3. To the bowl add the Mightylicious flour and salt. Continue mixing (I use a fork) until the flour is combined. The dough should feel rough and shaggy.
4. Cover the bowl and let rest for 30 minutes to 1 hour at room temperature.
5. Shape the dough into a rough ball.
6. Allow the dough to rise overnight or until double in size (3-12hrs). Cover the bowl with lightly oiled plastic wrap.
7. Once the dough has risen, remove the dough and place on a lightly floured surface. Shape the dough into a loaf by gently folding the sides towards the center of the dough.
8. After shaping, your dough needs to rise again. Bake in a Dutch oven or cast-iron pot with lid. Dust the bottom of your pot with cornmeal or line with parchment paper.
9. Let the dough rise for 30 minutes to 1 hour, or until it’s visibly puffy and no longer feels dense. It doesn’t need to double in size. While the dough proofs, preheat your oven to 450 F (232 C).
10. Score the top of the dough with a sharp knife.
11. Bake for 20 minutes with the lid on to capture steam. Remove the lid and finish baking (uncovered) for 40 minutes or until the crust is deep golden brown.
